Campfire Potatoes

The other day I decided to try something different  ---  I have been BBQing a lot lately and a popular thing on Pinterest has been potatoes on the grill. They have so many different varieties and favors but when I saw Bacon and Cheese Ones I knew that was something I could get Eddie on board with. The Recipe I adapted mine from came from Taste of Home . It was the most basic and simple and figured I could add my own flair easily to it. In the original recipe they had the potatoes in a foil wrapper but in the comments a few people mentioned that foil containers were a ton better so that's what I went with as well Campfire Potatoes Ingredients Foil Container 4 Potatoes 4 Slices of Bacon 3 tbsp Parmesan Cheese 1/2 tsp Garlic Powder 1/2 tsp Onion Powder 1/2 tsp Salt 1/2 tsp Pepper 2 tbsp Olive Oil 1/2 cup Cheddar 1/2 cup Mozzarella Directions 1) Pre Heat Grill 2) Peel Potatoes and dice into cubes 3) Combine Potatoes, Parmesan , garlic powder, onion powder,...

For a few years now I have participated in a program called BzzAgent where I am sent products then asked to review and spread the word on them Recently I was sent Castello® Burger Blue cheese slices and one of the tasks was to create a new recipe using the Blue Cheese In Honor of Memorial Day Here is what I came up with Red White and Blue Hot Dogs Ingredients: Hot Dogs Hot Dog Buns Castello® Burger Blue cheese Ketchup Directions: 1) Grill Hot Dogs 2) Place hot dogs in buns and top with blue cheese 3) Place back on Grill for a moment till cheese melts 4) Top with Ketchup

Grilled Chicken Club Sandwiches

I LOVE sandwiches but know they are not Eddie's. Soooo when I do make them I have to mix it up a bit. We do Paninis a lot but its been nice enough to grill and Eddie LOVES Bacon so i combined it all together for an awesome Grilled Chicken Sandwich Grilled Chicken Club Sandwiches Ingredients: -Sandwich Rolls -Grilled Chicken -Bacon -Cheese (I used Cheddar here but any kind works) -(optional) Sandwich Spread (mayo, mustard, pesto, you get the idea) -(optional) Some kind of green (lettuce, spinach, sprouts, etc) NOTES: -toasted and untoasted both taste amazing -Serves well with Fries or Chips

Family Dinner 4/27

Sunday we had Eddie's Family over to watch game of Thrones and have dinner We kept it easy and simple - BBQing Hot Dogs and having some appitizers My Famous Chips and Salsa - Recipe  Here Ranch Dip with Chips and Veggies (1 cup Cottage Cheese - 1 Cup Greek Yogurt - 1 Packet Ranch Dressing Mix) Pizza Egg Rolls - Recipe  Here BBQed Hot Dogs

Grilled Chicken Burritos

I Love BBQ Season!! SO much that it seems like all I've cooked lately is things on the BBQ Last night I grilled up some chicken that I had marinated in Cajun Seasoning, shredded it up, and threw it in a tortilla for some grilled chicken burritos Grilled Chicken Burritos Ingredients : -Chicken Tenders -Cajun Seasoning -Cheese -Tortillas -Burrito Fixings Directions: 1) Marinate Chicken in Seasoning over night 2) Grill Chicken 10 minutes on each side over medium heat 3) Shred Chicken 4) Add to a tortilla with cheese and other burrito fixings and roll up NOTE: -I hadn't been grocery shopping yet so all we had in our burritos was Chicken and Cheese but feel free to add in whatever burrito fixing you like -Don't have Cajun Seasoning? Mix it up with whatever you have -Don't have Chicken Tenders? Cut chicken breasts into 3-4 pieces and make your own or adjust grilling time

Grilled Teriyaki Chicken

I had chicken marinating in teriyaki sauce the other day but it has been getting nice lately So what better time to start BBQing then now. . . so rather than baking up the chicken I threw it on the grill and paired it with rice for a nice little dinner :) Grilled Teriyaki Chicken Ingredients : Chicken Tenders Teriyaki Sauce Rice Directions : 1) Marinate Chicken Tenders in Teriyaki Sauce over night 2) Grill for about 10 minutes on each side over medium heat 3) Serve with Rice NOTE: -If you don't have tenders you can cut chicken breasts into 3-4 pieces to make your own

BBQ Wings

Anyone that has been to our house knows that Fried Naked Wings are one of our staples for Game Day and another other get together that finger food is a must. However since we are currently not eating fried food we decided to try taking the wings outside and cooking them on the bbq. Eddie was a total Rock Star with these and they actually ended up tasting better then fried!! Eddie's BBQ Wings Ingredients: Chicken Wings Spice Seasoning or Marinade Wing Sauce Directions 1) Marinate Wings in Seasoning for at least 2 hours 2) Get Grill Heated between 375 and 425 Degrees 3) Place Metal Grilling Sheets on Grill and Spray with Cooking Spray then add the Wings 4) Cook for about 15 minutes per side until wings are brown and crispy 5) Add Wing Sauce and Enjoy NOTES -Found the metal racks at Wal-Mart -The Seasoning we use is a Spicy Chipotle Hickory Meat Rub but feel free to use whatever you want (ex: Salt and Pepper - Buffalo Sauce Marinade - Garlic and Italian Seaso...
