Salad Kits

Image
On Pinterest Salads in Mason Jars keep coming up as a popular pin. Sounds like a good idea to have everything all right there and just having to shake but I still think that it will all get soggy sitting in the dressing all week While I was grocery shopping last week I found little mini dip containers with a lid (similar to what you would get at a fast food restaurant) and thought those would be a better idea So I purchased the little dip containers along with all my salad fixings - premade the salads in containers with the dip and threw them in the fridge Was super surprised that I actually did end up eating more salad last week and seriously only took like 5 minutes to put it all together Here's an example of my "Salad Kits"

Roasted Veggies

With our cruise coming up and being gone for almost 2 weeks me and eddie had the plan to eat everything in the house and not go grocery shopping. It has lead to a few creative dinners and a little more snacking them normal but WOW I didn't realize how much food we actually did have in the house!! We are on week two of eating what we have then maybe buying one or two things and still have enough food to last us right up until we leave. Brown Rice Chips

Image
Last Month me and Eddie tried Trader Joe's Brown Rice Tortillas. We were looking for something Gluten Free to replace corn tortillas with and thought they would be great but ended up being not the best - weird texture, kind of crunch but not, made the burrito taste like a big un-fried egg roll and seems more fit for a Asian style sandwich wrap than anything else but wasn't quite sure what to do with them . . . until now!!! I was making Tortilla Chips the other day following this recipe when I ran short of tortillas so figured why not? and grabbed the brown rice tortillas. Used the same concept tweaking the recipe just a little bit. Spicy Brown Rice Chips Ingredients: -Brown Rice Tortillas -Olive Oil -Garlic Salt -Cayenne Pepper Directions: 1) Pre Heat oven to 350 Degrees 2) Brush 5-6 tortillas with olive oil then sprinkle on seasoning 3) Stack tortillas on top of each other and cut into 8 pieces 4) Place on Baking Sheet and cook for 10 minutes on lowest rac...

Bar Chips

Image
Since visiting Irena and Sheenan in Arizona after our honeymoon me and Eddie have been obsessed with BAR CHIPS!!! We stopped at a restaurant while we were out there visiting and this restaurant served what they called "bar chips" during happy hour. They were a mix between chips and french fries and gone quickly after hitting our side of the bar. When we got home it was my mission to re-create the bar chips. Originally they are fried but since I am deathly afraid of frying ANYTHING!!! mine are "oven fried" and last night I think we FINALLY perfected them!!! Sabrina's Oven "Fried" Bar Chips Ingredients: -4-6 Small Potatoes -Olive Oil -Minced Garlic -Seasoned Salt Directions : 1) Pre-heat Oven to 425 degrees 2) Completely Cover the bottom of a high walled baking sheet with oil 3) Spoon a few spoonfuls of garlic directly into the oil and spread around until evenly throughout the whole baking sheet 4) Sprinkle seasoned salt on to...
