What's Cookin? Pressure Cooker Teriyaki Chicken

The Pressure Cooker from my Aunt was one of the best gifts we have ever gotten. The fact that it can get dinner on the table in less than 30 minutes is just crazy!! I also love that it doubles or triples as a rice cooker AND slow cooker as well. Seriously AMAZING. For dinner the other night I used it twice (first to make rice) then this yummy chicken and still had dinner cooked in less than and hour AND before Eddie was home from work . . . I haven't made chicken poppers in a while so when I decided to make them for dinner tonight I figured I'd kick them up a notch I had chicken marinating in Franks Hot Sauce already so I chopped that up - threw in the spices - covered them in flour - then fried em up Kicked Up Chicken Poppers Ingredients Frank's Hot Sauce Chicken Tenders 1/2 tsp Salt 1/2 tsp Pepper 1/2 tsp Cayenne Pepper 1/2 tsp Paprika 1/2 tsp Garlic Powder Whole Wheat Flour Oil Directions 1) Marinade Chicken Tenders in Franks Hot Sauce for at least 1 hr 2) Remove Chicken Tenders from Hot Sauce and Chop into bite size pieces 3) Mix together salt, pepper, cayenne, paprika, and garlic powder and sprinkle over tenders until they are all covered 4) Pre-Heat Fryer or Oil to 375 degrees 5) Coat Tenders in Whole Wheat Flour 6) Fry for 4 minutes

I Love BBQ Season!! SO much that it seems like all I've cooked lately is things on the BBQ Last night I grilled up some chicken that I had marinated in Cajun Seasoning, shredded it up, and threw it in a tortilla for some grilled chicken burritos Grilled Chicken Burritos Ingredients : -Chicken Tenders -Cajun Seasoning -Cheese -Tortillas -Burrito Fixings Directions: 1) Marinate Chicken in Seasoning over night 2) Grill Chicken 10 minutes on each side over medium heat 3) Shred Chicken 4) Add to a tortilla with cheese and other burrito fixings and roll up NOTE: -I hadn't been grocery shopping yet so all we had in our burritos was Chicken and Cheese but feel free to add in whatever burrito fixing you like -Don't have Cajun Seasoning? Mix it up with whatever you have -Don't have Chicken Tenders? Cut chicken breasts into 3-4 pieces and make your own or adjust grilling time

I had chicken marinating in teriyaki sauce the other day but it has been getting nice lately So what better time to start BBQing then now. . . so rather than baking up the chicken I threw it on the grill and paired it with rice for a nice little dinner :) Grilled Teriyaki Chicken Ingredients : Chicken Tenders Teriyaki Sauce Rice Directions : 1) Marinate Chicken Tenders in Teriyaki Sauce over night 2) Grill for about 10 minutes on each side over medium heat 3) Serve with Rice NOTE: -If you don't have tenders you can cut chicken breasts into 3-4 pieces to make your own

Homemade Taquitos

The whole time we were in Chile we were CRAVING Mexican food. We had Breakfast Burritos in Texas. Tacos that night and then I decided to try my hand at homemade taquitos with the left over chicken I have read a ton of recipes online for them and they seemed super easy and seriously they were the easiest to make. They have a similar taste to the ones you buy frozen in the box but OMG soooooo much better!!! Homemade Taquitos Ingredients: -Shredded Chicken -Hot Sauce -Shredded Cheese -Corn Tortillas Directions: 1) Pre Heat Oven  to 425 degrees 2) Mix chicken, hot sauce, and cheese together in a bowl 3) Microwave 6 tortillas at a time for one minute 4) Fill tortillas with about 2 tbs of mix then roll up and place seam side down on a greased baking sheet 5) Spray tops of taquitos with cooking spray 6) Bake for 15-20 minutes NOTE: -Use as much or as little hot sauce and cheese as you want -I used a Chipotle Hot Sauce when I made these but you can use whatever kin...

Now that I am working 8 hours a day 5 days a week the Crock Pot has become my Best Friend . . . seriously easiest way to prepare dinner -Here's what we made last night Frank's Crock Pot Chicken Burritos Ingredients -Chicken Breast -Franks Hot Sauce -Taco Seasoning -Tortillas and your favorite burrito fixings Directions: 1) Throw Chicken Breast and Franks Hot Sauce in a Crock Pot and cook on low for at least 6 hours 2) When ready to serve drain juice and shred chicken 3) Stir in some taco seasoning and more hot sauce if needed 4) Serve in a tortilla with your favorite burrito fixings

BBQ Wings

Anyone that has been to our house knows that Fried Naked Wings are one of our staples for Game Day and another other get together that finger food is a must. However since we are currently not eating fried food we decided to try taking the wings outside and cooking them on the bbq. Eddie was a total Rock Star with these and they actually ended up tasting better then fried!! Eddie's BBQ Wings Ingredients: Chicken Wings Spice Seasoning or Marinade Wing Sauce Directions 1) Marinate Wings in Seasoning for at least 2 hours 2) Get Grill Heated between 375 and 425 Degrees 3) Place Metal Grilling Sheets on Grill and Spray with Cooking Spray then add the Wings 4) Cook for about 15 minutes per side until wings are brown and crispy 5) Add Wing Sauce and Enjoy NOTES -Found the metal racks at Wal-Mart -The Seasoning we use is a Spicy Chipotle Hickory Meat Rub but feel free to use whatever you want (ex: Salt and Pepper - Buffalo Sauce Marinade - Garlic and Italian Seaso...

While we have had to cut out Asian Food due to soy sauce having gluten (who would have known right?) thankfully Mexican Food has been there through it all Enchiladas our one of mine and eddies favorites and truthfully I never would have thought that they would be sooo easy to make the regular rolled up way instead of the casserole way like my mom make them (sorry mom for calling you out) but OMG it is so easy!!!!! Copy Cat - Wingers Rebel Sauce

Since getting a fryer as a wedding present - Fried Naked Wings have definitely made their place into our favorite dinner/party foods. Here in Utah we have a restaurant called Wingers that has one of the best sweet, sticky, spicy sauces that we have ever tried. Wingers does sell their original sauce at the various grocery stores in the area but being the spice lovers that we are we prefer it a little bit spicier (AKA Rebel sauce at the restaurant) which is not sold in stores. However thanks to Pinterest I have found a few copy cat recipes on  Chef in Training  and  Six Sisters Stuff  that feature the original recipe and have adjusted them into a spicier version. For Christmas Eve this year we had Eddie's mom, brothers, and grandparents come over to our house to celebrate. Eddie's family loves their sweets so we started off the night with a few sweet treats and appetizers, followed by a lot of fried food, and finished off with more sweets . . . Teriyaki Chicken

Chinese Food is something that we crave at least once a week. This week we were wanting Teriyaki Chicken and I totally forgot to pick up the Teriyaki Sauce. Thankfully I found this easy recipe on Food.com and thanks to the spice rack we got at the wedding I had all the ingredients on hand!! The original recipe has you cook the sauce on the stove then pour it over cooked chicken - - rather than doing that I used it as a marinade and then cooked the chicken in the sauce Homemade Teriyaki Chicken Ingredients -1/4 cup soy sauce -1 cup water -1/2 teaspoon ground ginger -1/4 teaspoon garlic powder -5 tablespoons packed brown sugar -2 tablespoon honey -2 tablespoons cornstarch -2 Frozen Chicken Breast Directions 1) Mix all the ingredients together in a large bowl 2) Place Frozen Chicken Breasts in the Marinade cover with foil and let sit for at least 4 hours 3) Pour Chicken and sauce into a greased baking dish and bake at 375 degrees for 40 minutes
