Enchiladas with Homemade Sauce

I LOVE Enchiladas and Enchiladas with Homemade Sauce is sooooooooo good - I made it once and never went back to the canned stuff.

Making your own sauce is actually super simple and easier than you would think and the flavor makes it totally worth it

I use Emeril Lagasse's recipe which can be found here with a few little twists including cayenne pepper to add a spicy kick

Enchilada Sauce

Ingredients:
3 tbsp vegetable oil
1 tbsp flour
1/4 cup chili powder
2 cups chicken stock or Broth (both work)
12 oz can of tomato paste
1 tsp dried oregano
1 tsp ground cumin
1/2 tsp salt
1/2 tsp cayenne pepper

Directions:
1) In a saucepan combine oil and flour over medium heat for about 1 minute
2) Stir in chili powder 
3) Mix in stock, tomato paste, oregano, and cumin 
4) Bring to a boil
5) Reduce heat to low and cook for 15 minute

NOTES:
-Makes about 2 batches 
-You can use plain tomato sauce or half sauce half paste for a thinner sauce
-1/2 cayenne gives it just a little kick feel free to add more or less depending on your tastes
