Reese's Peanut Butter Egg Cookies

I threw an event at work saturday and didn't realize until midday sunday that I forgot the leftover chocolate in my car. Normally this wouldn't be that big of a deal but 1) it was good chocolate (reese's peanut butter eggs) and 2) it has actually started to get hot FINALLY!! and the chocolate was melted. Eddie wanted me to make cookies to bring to work Wednesday so I decided to freeze the peanut butter eggs, cut them up, and throw them into a cookie :) Reese's Peanut Butter Egg Cookies Ingredients: 1 cup butter 1 cup brown sugar 1 cup sugar 2 eggs 1 tsp vanilla 3 cups flour 1 tsp baking soda 1/4 tsp salt 12 Reese's Eggs (chopped) Directions: 1) Pre Heat oven to 350 degrees 2) Cream butter and sugars 3) Add Egg and vanilla 4) Add Flour  (1 cup at a time), baking soda, and salt 5) Stir in Reese's Eggs 6) Spoon onto cookie sheet and bake for 10 minutes NOTE: -Mix makes about 46 cookie

CrockPot Baked Potatoes

I have seriously found the easiest way to make Baked Potatoes. . . Put them in the CrockPot!!! I found this tip on Pinterest a while back and seriously haven't made baked potatoes any other way since CrockPot Baked Potatoes Need: CrockPot Foil Potatoes Directions: 1) Wrap Potatoes individually in foil 2) Place in CrockPot and cook on low all day

Breakfast Quesadillas

Eddie LOVES breakfast while I on the other hand am perfectly happy just having a cup of coffee. Every once in while tho I will surprise him and make breakfast. A while back I wanted to make breakfast burritos but didn't realize till the end that I was out of flour tortillas and only had corn -- so instead I made breakfast quesadillas!!! Was a little worried at first but they actually turned out pretty good Breakfast Quesadillas Ingredients Corn Tortillas Cheese Scrambled Eggs Bacon Directions 1) Pre heat oven to 350 degrees and Lay out two tortillas per quesadilla 2) Put cheese on each tortilla then scrambled eggs on one and bacon on the other 3) Bake for 5 minutes 4) Put the quesadillas together then broil each side for 2 minutes NOTE: -I use sliced sandwich cheese for convince but really any cheese works -Feel free to mix this up with different meats and veggies

Cajun Chicken Mac and Cheese

Everyone that knows us knows that Mac and Cheese is a regular dinner in our house. . . No Shame here lol Lately Eddie hasn't wanted anything too spicy so we mixed it up going Cajun last night Cajun Chicken Mac and Cheese Ingredients Chicken Breast Salt Pepper Cajun Seasoning Pasta Ragu Cheddar Cheese Sauce Shredded Cheese Sliced Sandwich Cheese Bread Crumbs Pepperoni (cut up) Directions 1) Bake Chicken Breast sprinkled with salt and pepper at 375 degrees for 50 minutes 2) Turn oven down to 350 then chop up chicken and put in a frying pan over medium heat 3) Sprinkle chicken with Cajun Seasoning then cook till brown 4) Boil pasta according to package directions 5) Drain pasta then combine with cheese sauce, shredded cheese, and chicken 6) Place mixture into greased baking dish then top with sliced cheese, Bread crumbs, and pepperoni 7) Bake at 350 for 30 minutes

Cheesy Garlic Monkey Bread

Monkey Bread is the big new thing on Pinterest. Everyone has their own version ranging from sweet to savory and everything in between. All of the recipes are pretty similar: Get a can of biscuits --> cut them up --> toss in butter and other ingredients --> then bake until its done. Eddie has been craving both garlic bread and cheesy bread so I joined the trend and created my own version of monkey bread Cheesy Garlic Monkey Bread Ingredients: 1 can of Biscuits 1/4 cup Butter (melted) 1/2 cup Shredded Cheese 1/2 tsp Greek Seasoning Parmesan Cheese Directions: 1) Pre-Heat Oven to 350 degrees 2) Open Can of biscuits and cut each one into quarters 3) Toss biscuits in butter, shredded cheese, and greek seasoning 4) Put mixture in baking pan and top with parmesan cheese 5) Bake for 20-25 minutes

Chipotle Steak Burritos

The other day me and Eddie were really craving Burritos and wanted to make our Carne Asada Burritos Doesn't it look good? So we went to Trader Joe's to pick up the meat (Trader Joe's Carne Asada) and they were all sold out!!!! We had to compromise and got the thinly sliced Sirloin. Not quite sure what the spices are that Trader Joe's Uses I had to compromise with a mix of Chipotle and Taco Seasoning. . . the mix turned out to be a pretty good substitution - not as spicy as the original but definitely the same flavor profile I LOVE these little cubes! (1 cube = 1 Chipotle Pepper) Chipotle Steak Burritos Ingredients: 1-2 pound thinly sliced beef 2 cubes of Chipotle Seasoning Taco Seasoning 1 can Enchilada Sauce Directions: 1) Place Meat and Seasonings in CrockPot and cook on high for 4 hours or low for at least 6 hours 2) 30 minutes before serving - dump out juice, shred meat, then add in enchilada sauce 3) Serve in a burrito, ta

Super Easy Mac and Cheese

Mac and Cheese is a regular dinner in our house and recently I found something that makes mac and cheese even easier to make. . . Cheesy Ragu Double Cheddar! This stuff is awesome!! Super Easy Mac and Cheese Ingredients: -Franks Buffalo Sauce -Chicken Breast -Pasta -Cheesy Ragu Double Cheddar -Shredded Cheese -Bacon (optional) Directions: 1) Marinate Chicken in Franks Buffalo Sauce overnight 2) Bake Chicken then chop into bite size pieces 3) Leave Oven heated to 350 4) Cook and Drain Pasta 5) Add Cheesy Ragu and Cheese to Pasta 6) Mix in Chicken 7) Spoon Pasta into a baking dish then top with More cheese and Bacon (optional) 8) Bake for 30 minutes
