Buffalo Chicken Taquitos

I didn't have to cook last night for 4th of July but I did bring Eddie something Special to work to share with his co- workers for lunch Fresh Fried Chips and Salsa + Buffalo Chicken Taquitos I have made taquitos quite a few time and always use some kind of hot sauce but I went back to a classic and my favorite Buffalo Sauce for Eddie and his co-workers yesterday Buffalo Chicken Taquitos Ingredients: -Shredded Chicken -Buffalo Sauce -Shredded Cheese -Corn Tortillas Directions: 1) Pre Heat Oven  to 425 degrees 2) Mix chicken, hot sauce, and cheese together in a bowl 3) Microwave 6 tortillas at a time for one minute 4) Fill tortillas with about 1-2 tbs of mix then roll up and place seam side down on a greased baking sheet 5) Spray tops of taquitos with cooking spray 6) Bake for 15-20 minutes

Homemade Baja Blast

Eddie is OBSESSED with Baja Blast he either gets a Baja Freeze from Taco Bell or Drinks the Soda from 7-11 at least once a day Me and Eddie have discovered the Secret!!!! Colby Jack Stuffed Crust Pizza

This week has been the week of not having everything I need to make the things I want Eddie wanted me to make pizza last night and typically I make stuffed crust pizza and stuff it with string cheese . . . I had mozzarella but only enough for the pizza so I compromised and stuffed the crust with Colby Jack. . . Breakfast Paninis

I love sandwiches but don't really care for Breakfast - -  However Eddie LOVES breakfast so I try and make him something monday and tuesday mornings when we have our days off This week I put my Love for Sandwiches and Eddies Love for breakfast together and dressed them up for a "fancy" Breakfast sandwich Breakfast Paninis  Ingredients: Bread Eggs Bacon Cheese Directions: 1) Cook Eggs and Bacon 2) Pre-Heat Panini Grill 3) Assemble Sandwiches with Cheese on Both Sides 4) Place in Panini Grill until both sides are golden brown NOTES -You can use a frying pan if you don't have a Panini Grill -I don't use any butter or cooking spray but feel free to if you want

I fried one chip and now I can't get enough. . . The chips in the bag have nothing on them lol To bring it up one more notch I made a few batches of salsa including one where I switched out the jalapeno with a serrano . . .which I thought were suppose to be spicier but was not at all . . .seriously think the salsa recipe is foolproof its all in the seasoning mix but the extra kick from the peppers definitely helps :) For the Chips: 1) Cut tortilla into 6-8 pieces 2) Fry in 350 degree oil for 1-2 minutes For the Salsa: Blend together 14oz can of tomatoes drained 1 whole jalapeno or serrano 1/8 of an onion 1 teaspoon garlic salt 1/4 teaspoon salt 3/4 teaspoon cumin 1/4 teaspoon sugar 1 teaspoon lime juice

I have made my own chips for a while typically baking them - - However when we were in Vegas on of the couples mentioned they have been frying their own lately and they are sooooooo good nothing else compares. . . SOOOOOOOO you know I had to try it for myself Homemade Fried Tortilla Chips Ingredients: Oil for Frying Corn Tortillas Seasoned Salt Directions: 1) Pre-Heat Oil to 350 degrees 2) Stack Tortillas up and Cut into 6 triangles 3) Fry about 20 chips for 2 minutes 4) Drain on Paper Towel and sprinkle with Salt 5) Repeat until all chips are fried

Quinoa Caprese Salad

I've had a box of quinoa in the cupboard for who knows how long - and after inviting one of my co-worker and his wife over for dinner i got the idea from her to use it in a salad I don't like recipes with ten zillion things in them so when I stumbled upon a caprese quinoa salad on pinterest I knew it would be a good starting point for me. Quinoa Caprese Salad Ingredients 1 cup Quinoa dry cooked (1 cup quinoa 2 cups water) 1 container mini tomatoes 5 sticks of string cheese cut up a handful of basil leaves chopped Olive Oil and Balsamic Vinegar Salt and Pepper Directions 1) Mix Everything together 2) When ready to serve top individual portions with oil and vinegar 3) Add salt and pepper to taste NOTES: -CousCous would work too -Feel free to use big tomatoes -I always have string cheese so thats what I used but a ball/block of mozzarella cheese works too

Campfire Potatoes

The other day I decided to try something different  ---  I have been BBQing a lot lately and a popular thing on Pinterest has been potatoes on the grill. They have so many different varieties and favors but when I saw Bacon and Cheese Ones I knew that was something I could get Eddie on board with. The Recipe I adapted mine from came from Taste of Home . It was the most basic and simple and figured I could add my own flair easily to it. It got into the mid 90s today so we busted out the blender today for Homemade Baja Blast Freezes I added my new favorite beer Coors Light Summer Brew to mine and Eddie added Citron Vodka to his for an added kick We then moved onto Margarita with Crystal Light Margarita mix to finish off the night This Margarita could use some green food coloring lol Ingredients -Blender Full of Ice -2 cups per made Crystal Light Margarita Mix -1 cup tequila -1/4 cup Tripe Sec Directions 1) Put all ingredients in a blender and blend 2) Add more ice if needed

For a few years now I have participated in a program called BzzAgent where I am sent products then asked to review and spread the word on them Recently I was sent Castello® Burger Blue cheese slices and one of the tasks was to create a new recipe using the Blue Cheese In Honor of Memorial Day Here is what I came up with Red White and Blue Hot Dogs Ingredients: Hot Dogs Hot Dog Buns Castello® Burger Blue cheese Ketchup Directions: 1) Grill Hot Dogs 2) Place hot dogs in buns and top with blue cheese 3) Place back on Grill for a moment till cheese melts 4) Top with Ketchup

Chicken Poppers

I haven't made chicken poppers in a while so when I decided to make them for dinner tonight I figured I'd kick them up a notch I had chicken marinating in Franks Hot Sauce already so I chopped that up - threw in the spices - covered them in flour - then fried em up Kicked Up Chicken Poppers Ingredients Frank's Hot Sauce Chicken Tenders 1/2 tsp Salt 1/2 tsp Pepper 1/2 tsp Cayenne Pepper 1/2 tsp Paprika 1/2 tsp Garlic Powder Whole Wheat Flour Oil Directions 1) Marinade Chicken Tenders in Franks Hot Sauce for at least 1 hr 2) Remove Chicken Tenders from Hot Sauce and Chop into bite size pieces 3) Mix together salt, pepper, cayenne, paprika, and garlic powder and sprinkle over tenders until they are all covered 4) Pre-Heat Fryer or Oil to 375 degrees 5) Coat Tenders in Whole Wheat Flour 6) Fry for 4 minutes

Grilled Chicken Club Sandwiches

I LOVE sandwiches but know they are not Eddie's. Soooo when I do make them I have to mix it up a bit. We do Paninis a lot but its been nice enough to grill and Eddie LOVES Bacon so i combined it all together for an awesome Grilled Chicken Sandwich Grilled Chicken Club Sandwiches Ingredients: -Sandwich Rolls -Grilled Chicken -Bacon -Cheese (I used Cheddar here but any kind works) -(optional) Sandwich Spread (mayo, mustard, pesto, you get the idea) -(optional) Some kind of green (lettuce, spinach, sprouts, etc) NOTES: -toasted and untoasted both taste amazing -Serves well with Fries or Chips

Enchiladas with Homemade Sauce

I LOVE Enchiladas and Enchiladas with Homemade Sauce is sooooooooo good - I made it once and never went back to the canned stuff. Making your own sauce is actually super simple and easier than you would think and the flavor makes it totally worth it I use Emeril Lagasse's recipe which can be found  here  with a few little twists including cayenne pepper to add a spicy kick Enchilada Sauce Ingredients: 3 tbsp vegetable oil 1 tbsp flour 1/4 cup chili powder 2 cups chicken stock or Broth (both work) 12 oz can of tomato paste 1 tsp dried oregano 1 tsp ground cumin 1/2 tsp salt 1/2 tsp cayenne pepper Directions: 1) In a saucepan combine oil and flour over medium heat for about 1 minute 2) Stir in chili powder  3) Mix in stock, tomato paste, oregano, and cumin  4) Bring to a boil 5) Reduce heat to low and cook for 15 minute NOTES: -Makes about 2 batches  -You can use plain tomato sauce or half sauce half paste for a thi...

I have been using the basic cookie recipe that I have been using for my Reese's Pieces Egg Cookies To do a few different variations Here is the basic recipe and below you will find some of the variations I have tried Basic Cookie Recipe Ingredients: 1 cup butter 1 cup brown sugar 1 cup sugar 2 eggs 1 tsp vanilla 3 cups flour 1 tsp baking soda 1/4 tsp salt Directions: 1) Pre Heat oven to 350 degrees 2) Cream butter and sugars 3) Add Egg and vanilla 4) Add Flour  (1 cup at a time), baking soda, and salt 5) Spoon onto cookie sheet and bake for 10 minutes Variation 1 -  Mint Chip 1/3 Cup Dark Chocolate, 1/3 Cup White Chocolate, 1/3 Cup Mint Chips   Variation 2 -  M&Ms 1 cup M&M's

Homemade Ranch Seasoning

I LOVE Ranch - - I don't eat it as much now like I did before I met Eddie (he hates ranch) but when I do I eat it by the spoonful Especially my Ranch Veggie Dip Over Easter I made my ranch dip and the end of it was sitting in my fridge when I decided to go UnProcessed. While the dip itself consists of Greek Yogurt and Cottage Cheese it was the Ranch Dressing Packet that was killing it for me HOWEVER after seeing a post on  Gimme Some Oven  it was actually super simple to make that little packet myself Homemade Ranch Seasoning Ingredients 2 Tbsp. dried parsley 1 1/2 tsp. dried dill weed 2 tsp. garlic powder 2 tsp. onion powder 1 tsp. ground black pepper 1 tsp. salt Directions 1) Combine all ingredients NOTES -Use 1 tbsp mixed with 1 cup greek yogurt and 1 cup Cottage Cheese to make a dip -Add about 1/4 cup milk to dip to make a dressing

With Vegas and Summer coming up I have decided to start eating a little bit healthier and rather than going low carb or no bread which works but doesn't last with me I figured I'd give the No Processed Food Diet another go around The first thing I decided to change is something that we eat all the time at our house SALSA. While I do make my own salsa rather than buy it BUT I use canned tomatoes and canned jalapenos in the recipe. It wasn't as easy as just swapping out the tomatoes and jalapenos for fresh -- I also had to adjust the seasoning a little bit . . . all and all I was pretty impressed with this salsa and will totally make it again!!! Eddie doesn't really like Egg Rolls in a traditional sense but when I saw pizza eggrolls show up over and over again on Pinterest I figured I'd try them out. These are now Eddie's FAVORITE Egg Rolls!!
