Breakfast Paninis

I love sandwiches but don't really care for Breakfast - -  However Eddie LOVES breakfast so I try and make him something monday and tuesday mornings when we have our days off This week I put my Love for Sandwiches and Eddies Love for breakfast together and dressed them up for a "fancy" Breakfast sandwich Breakfast Paninis  Ingredients: Bread Eggs Bacon Cheese Directions: 1) Cook Eggs and Bacon 2) Pre-Heat Panini Grill 3) Assemble Sandwiches with Cheese on Both Sides 4) Place in Panini Grill until both sides are golden brown NOTES -You can use a frying pan if you don't have a Panini Grill -I don't use any butter or cooking spray but feel free to if you want

Breakfast Quesadillas

Eddie LOVES breakfast while I on the other hand am perfectly happy just having a cup of coffee. Every once in while tho I will surprise him and make breakfast. A while back I wanted to make breakfast burritos but didn't realize till the end that I was out of flour tortillas and only had corn -- so instead I made breakfast quesadillas!!! Was a little worried at first but they actually turned out pretty good Breakfast Quesadillas Ingredients Corn Tortillas Cheese Scrambled Eggs Bacon Directions 1) Pre heat oven to 350 degrees and Lay out two tortillas per quesadilla 2) Put cheese on each tortilla then scrambled eggs on one and bacon on the other 3) Bake for 5 minutes 4) Put the quesadillas together then broil each side for 2 minutes NOTE: -I use sliced sandwich cheese for convince but really any cheese works -Feel free to mix this up with different meats and veggies

Breakfast Cupcakes #2

Since going Bread Free/ Gluten Free Breakfast has become key to not starving throughout the day. However we can only eat eggs and bacon or sausage so much without getting tired of it. To mix things up I did a variation of my  Breakfast Cupcakes  taking out the bacon and going with Turkey rather than ham as the main meat. Turkey, Egg, and Cheese Cups Ingredients Sliced Turkey Lunch Meat Eggs Scrambled Cheese Directions 1) Pre-Heat oven to 375 degrees 2) Spray a muffin tin with cooking spray 3) Place 1 Piece of Turkey in each cupcake hole 4) Pour Scrambled Eggs into each cup filling about 3/4 full 5) Place cheese on top of the eggs 6) Bake for 15-20 minutes NOTES -I use about 1 egg for every two cups -Usually we eat about 3 per person

Microwave egg omelet

So FYI you can make microwaved omelets!!! I scrambled up one egg in a glass bowl added bacon, shredded chicken, salt and pepper ... Put it in the microwave for 1 minute topped with cheese then back in for 30 more seconds and TA DA!!! UPDATE (July 27,2012): Looks like I was ahead of the trend. . .was watching doctor oz yesterday and he had a guest on that gave two recipes including microwaved eggs. . . here are the recipes that were featured on the show ( http://www.doctoroz.com/videos/5-minute-microwaveable-power-breakfasts ) Mediterranean Breakfast Pizza Ingredients 1 whole wheat flat bread pita 1 tbsp low-fat cream cheese 1 tsp garlic 1 handful fresh baby spinach 3 thin slices of tomato 1 egg Directions Spread one side of pita with cream cheese. Put pita on a microwave safe plate. Place a handful of spinach on top. Top spinach with tomato slices and garlic. Crack egg in the center of the pita. Fruit Smoothies

Eddie Loves Breakfast Food while I on the other hand would rather just have a coffee, jamba juice, etc. I have been making coffee every morning but lately its getting a bit too hot and homemade iced coffee just doesn't taste the same. Fitness Magazine this month had a few ideas for adding fruit to your diet and these fruit smoothies were a part of that. Best part is with this recipe you can use whatever fruit you want just make sure you have on hand half a banana (to give it the creaminess) and some kind of milk (to bind it all together) . . . I plan on playing around with the liquid part in the future maybe green tea, fruit juice, etc but for now here is the basic recipe Fruit Smoothies Ingredients: -3/4 cup milk -1/2 cup frozen fruit -1/2 banana (fresh or frozen) Directions: 1) Place all 3 ingredients in blender and blend until smooth NOTES : -I used vanilla soy milk but you can use whatever milk that you have on hand -If you need some sweetne...

Breakfast Cupcakes

Being as Addicted to Pinterest as I am, a lot of the ideas I get for things come from the site. Recently, I have been seeing a lot of recipes for savory cupcakes, eggs cooked in muffin tins for breakfast sandwiches, edible serving cups, etc. Rather then trying to make all of the different ideas I instead put them all together to make Eddie these breakfast cupcakes Eddie's Breakfast Cupcakes Ingredients: -Deli/Sandwich Ham -Bacon (Regular or Turkey) -Cheese -Eggs Directions: 1) Pre-Heat oven to 375 degrees 2) Spray a muffin tin with cooking spray 3) Place 1 Piece of Ham in each cupcake hole 4) Roll Bacon into a circle (like a bracelet) and line in the inside of the ham with it 5) Place cheese in the bottom of your bacon ring 6) Crack one egg on top of the cheese or scramble eggs and pour mixture inside 7) Bake for 15-20 minutes  NOTES/TIPS: -You don't need to fill the whole cupcake mold unless you want ...
