Breakfast Paninis

I love sandwiches but don't really care for Breakfast - -  However Eddie LOVES breakfast so I try and make him something monday and tuesday mornings when we have our days off This week I put my Love for Sandwiches and Eddies Love for breakfast together and dressed them up for a "fancy" Breakfast sandwich Breakfast Paninis  Ingredients: Bread Eggs Bacon Cheese Directions: 1) Cook Eggs and Bacon 2) Pre-Heat Panini Grill 3) Assemble Sandwiches with Cheese on Both Sides 4) Place in Panini Grill until both sides are golden brown NOTES -You can use a frying pan if you don't have a Panini Grill -I don't use any butter or cooking spray but feel free to if you want

Grilled Chicken Club Sandwiches

I LOVE sandwiches but know they are not Eddie's. Soooo when I do make them I have to mix it up a bit. We do Paninis a lot but its been nice enough to grill and Eddie LOVES Bacon so i combined it all together for an awesome Grilled Chicken Sandwich Grilled Chicken Club Sandwiches Ingredients: -Sandwich Rolls -Grilled Chicken -Bacon -Cheese (I used Cheddar here but any kind works) -(optional) Sandwich Spread (mayo, mustard, pesto, you get the idea) -(optional) Some kind of green (lettuce, spinach, sprouts, etc) NOTES: -toasted and untoasted both taste amazing -Serves well with Fries or Chips

Ham and Cheese "Cupcakes"

Its getting to that time and me and Eddie are trying to get rid of all the food in our house before purchasing any more and while sometimes that calls for weird dinner/lunch combinations todays was anything but!! We always have stuff in our house for making pizza or sandwiches and today for lunch I combined them together for a little pizza cupcake. Served on their own or with marinara sauce on the side for dipping these were pretty Awesome :) Ham and Cheese "Cupcakes" Ingredients: -Pizza Dough (any kind) -Olive Oil -Greek Seasoning (or Italian Seasoning and Garlic Powder) -Ham -Mozzarella Cheese Directions: 1) Pre Heat Oven to 375 Degrees 2) Spray inside of a 12 cup muffin pan 3) Roll out pizza dough 4) Brush Dough with olive oil then sprinkle on seasoning, Ham, and Cheese 5) Roll up then cut into 12 pieces 6) Place each piece inside muffin tin 7) Bake for 25 minutes 8) Broil for 2 minutes

Spicy Turkey Panini

Recently I found this website called 300sandwiches.com about a girl who has bet with her boyfriend that once she makes him 300 sandwiches he will ask her to marry him. I love sandwiches and love the idea behind 300sandwiches.com . . . me and eddie could have had a similar bet but it probably would have been pizzas instead of sandwiches lol Anyways I totally read the whole blog in like 2 days (she on sandwich 199 right now) - while this recipe didn't come from her website it got me in the mood to make eddie a sandwhich for lunch. Spicy Turkey Panini Ingredients: Ciabatta Bread Spicy Sandwich Spread Pepper Jack Cheese Deli sliced Turkey Directions: 1) Slice bread into a large sandwich sized piece then slice down the middle 2) Spread the spicy sandwich spread on both sides of the bread 3) Add Cheese and Meat 4) Cook in a Panini Maker or in a fry in a pan untill bread is brown and crispy and cheese is melted NOTE: When making any kind of grilled sandwich or panini...

Individual Roast Beef Sandwiches

As you all know we are cleaning out all the food in our house as part of our vacation prep so when we decided to do Roast Beef Sandwiches for dinner last night we used the only bread in the house . . . hamburger buns. Surprising these turned out to be really good and it would be really easy to make a ton of these if needed. I mixed up the recipe a little bit but still had the taste that our classic roast beef sandwich has. Individual Roast Beef Sandwiches Ingredients: -Hamburger Buns (or any other roll) -Butter -Greek seasoning -Sandwich Swiss Cheese -Deli Roast Beef Directions: 1) Butter each side of the hamburger buns 2) Top with Greek seasoning 3) Place under broiler (high) for about 5 minutes or until brown 4) While buns are browning place package of roast beef in a frying pan and cook at medium high for about 10 minutes 5) Place 1 piece of Swiss cheese on each side of the bun then put back into the oven (broiler OFF) 6) Once meat is done take buns out of the...

"The Best Thing I Ever Made: Sandwiches"

This Morning on Food Network we were watching "The Best Thing I Ever Made: Sandwiches" which got me thinking I should share the Best Sandwich I Ever Made with all of you Eddie's Roast Beef Sandwich Ingredients: -1 loaf of un-sliced bread -Butter -Minced garlic -1 package of sandwich style roast beef -Swiss Cheese Directions: 1) Pre-heat oven to 350 degrees 2) Cut Loaf of Bread in Half separating top from bottom to make one big sandwich 3) Spread Butter on both sides of the bread followed by minced garlic and place in oven for 10 minutes 4) While bread is in the oven separate the roast beef slices and put them into a frying pan over medium heat until meat is browned (usually about 10 minutes) 5) Take bread out of the oven and top both sides with Swiss cheese 6) Put the roast beef on the bottom half and place sandwich back in the oven leaving both sides open for about 5 minutes or until cheese melts 7) Put the top on the sandwich and leave in the oven...
