Breakfast Quesadillas

Eddie LOVES breakfast while I on the other hand am perfectly happy just having a cup of coffee. Every once in while tho I will surprise him and make breakfast. A while back I wanted to make breakfast burritos but didn't realize till the end that I was out of flour tortillas and only had corn -- so instead I made breakfast quesadillas!!! Was a little worried at first but they actually turned out pretty good Breakfast Quesadillas Ingredients Corn Tortillas Cheese Scrambled Eggs Bacon Directions 1) Pre heat oven to 350 degrees and Lay out two tortillas per quesadilla 2) Put cheese on each tortilla then scrambled eggs on one and bacon on the other 3) Bake for 5 minutes 4) Put the quesadillas together then broil each side for 2 minutes NOTE: -I use sliced sandwich cheese for convince but really any cheese works -Feel free to mix this up with different meats and veggies

Oven Quesadillas

It is not uncommon for us to have quesadillas for dinner but making them 2-3 at a time never seems to be enough - - Since my oven tacos were so popular I decided to try out quesadillas in the oven too and surprise surprise they taste just as good and are actually healthier and crunchier this way too :) Oven Quesadillas Ingredients: Corn tortillas Shredded cheese Shredded chicken Directions: 1) on a baking sheet spread out as many tortillas as you can (mine fit 6) 2) top tortillas with cheese - chicken - more cheese - second tortillas 3) put baking sheet in a cold oven 4) turn on to 350 degrees and cook for 10 minutes 5) broil for 1-2 minutes 5) flip and broil for 1-2 more minutes 

Oven Tacos

When it comes to tacos Eddie likes them crunchy and I like them soft. One night waiting for Eddie to get home from work I accidentally came up with a technique that makes them a little bit of both Oven Tacos Ingredients: -Corn Tortillas -Taco Meat -Cheese -Additional Taco toppings Directions: -Fill Corn Tortillas with meat and cheese and place into a baking dish -Place baking dish in a cold oven then turn on to 350 degrees -Cooks taco in oven for 10 minutes -After 10 minutes turn off oven and let tacos sit in oven until ready to serve -Take out of oven and top with any additional toppings that you like

Simple Lasagna

Now that we have found Gluten Free Brown Rice Lasagna Noodles we are able to add lasagna back into our dinner options After looking over a few recipes I found  this recipe  by Robin Miller on Foodnetwork.com and tweaked it a bit to fit our style Simple Lasagna Ingredients: -Lasagna Noodles -Ground Sausage -2 tsp minced garlic -2 tsp Italian Seasoning -1 tsp Red Pepper Flakes -2 small cans tomato sauce -Small container of Ricotta Cheese -Shredded Mozzarella Cheese -Black pepper Directions: 1) Pre Heat oven to 350 degrees 2) Cook Ground Sausage adding garlic, Italian seasoning, and red pepper flakes until browned 3) Add a small can of tomato sauce and simmer for 10 minutes 4) Mix together ricotta cheese, 1 cup mozzarella, and black pepper 5) Pour half a can of tomato sauce into the bottom of a baking dish 6) Cover bottom with UNCOOKED lasagna noodles 7) Top with half of the ricotta mixture followed by half of the meat 8) Cover with las...

Brown Rice Chips

Last Month me and Eddie tried Trader Joe's Brown Rice Tortillas. We were looking for something Gluten Free to replace corn tortillas with and thought they would be great but ended up being not the best - weird texture, kind of crunch but not, made the burrito taste like a big un-fried egg roll and seems more fit for a Asian style sandwich wrap than anything else but wasn't quite sure what to do with them . . . until now!!! I was making Tortilla Chips the other day following this recipe when I ran short of tortillas so figured why not? and grabbed the brown rice tortillas. Used the same concept tweaking the recipe just a little bit. Spicy Brown Rice Chips Ingredients: -Brown Rice Tortillas -Olive Oil -Garlic Salt -Cayenne Pepper Directions: 1) Pre Heat oven to 350 Degrees 2) Brush 5-6 tortillas with olive oil then sprinkle on seasoning 3) Stack tortillas on top of each other and cut into 8 pieces 4) Place on Baking Sheet and cook for 10 minutes on lowest rac...

Gluten Free Pizza

While being Gluten Free me and Eddie have been on the Quest trying to find the BEST GF Pizza on the market - whether is was using some kind of crust mix or pre made we tried a lot of different options. . . We tried the Namaste Foods Gluten Free Pizza Crust Mix last month with not the best results. The pack came with 2 servings and no matter how much I cooked it or thin I spread the mix it just didn't taste right as you are see here. Since then we have tried two more options: Udi's Gluten Free Pizza Crusts These we found in the freezer section of the grocery store you can either keep them frozen or in the fridge (we keep them frozen and they defrosted in like 15 minutes) It comes with in the bag and they are the size of a personal pizza and you top them with whatever you want then throw them into the oven. Spicy Chicken Enchiladas

While we have had to cut out Asian Food due to soy sauce having gluten (who would have known right?) thankfully Mexican Food has been there through it all Enchiladas our one of mine and eddies favorites and truthfully I never would have thought that they would be sooo easy to make the regular rolled up way instead of the casserole way like my mom make them (sorry mom for calling you out) but OMG it is so easy!!!!! GF update

It has been about 6 weeks since me and Eddie started our bread free/ Gluten free diet. We are still going strong but have decided to add in a cheat meal once a week and expand our menu with new gluten free items. We have been shopping different grocery stores to see what they have to offer and have found lots of promising item but not very many that have been awesome or better than the originals. On that note lets start with the good things we have found and will probably continue to eat even after this diet. 1) Glutino Gluten Free Pretzels Picture from caloriecount.about.com   These pretzels are so good and super crunchy.
