Chicken Chow Mein

I don't know why but I have been CRAVING Asian Food lately . . maybe its because of all the chow mein and noodle recipes I have been finding on Pinterest or something but whatever it was my craving has been satisfied! Homemade Chicken Chow Mein Ingredients: 1 package Top Ramen Noodles 1/2 Head of Cabbage 1/2 Onion 1 Carrot 1 Stalk of Celery 1-2 Chicken Breast Cooked Oil Salt Pepper 2 tbsp Soy Sauce 1/2 tsp Sesame Oil 2 tbsp Worcester Sauce 1 tbsp Ketchup 1 tbsp siracha 1/2 tsp ground ginger Directions: 1) Cook Noodles (I did mine in the microwave - cover with water and cook for 5 minutes) 2) Chop Veggies and Cube Chicken 3) Saute Veggies in oil and season with salt and pepper until they are about half the size as when you started 4) Add Drained Noodles and Chicken 5) Combine Remaining Ingredients and Pour over Noodles 6) Toss everything together and heat through for about 5 minutes Recipe Adapted From:  BudgetBytes.com

Grilled Chicken Club Sandwiches

After cutting out bread carbs for a while - me and eddie splurged the other night with some Chicken Club Sandwiches Grilled Chicken Club Sandwiches Ingredients: Chicken Breast Pounded or Cut Thin Seasoned Salt Pepper Greek Seasoning Mozzarella Turkey Bacon Sandwich Rolls Directions: 1) Season Chicken with Seasoned Salt, Pepper, and Greek Seasoning 2) Grill for about 15 minutes on each side 3) While Grilling Cook Turkey Bacon 4) Top Rolls with Chicken - Bacon - Cheese 5) Serve as is or place in a panini maker until cheese melts and the bread is toasted NOTE: -If you don't have Greek Seasoning - Italian Season + Garlic Powder will give you a similar flavor -I served mine with Pesto on the side so each person could add as much or as little as they'd like

Microsoft Band

I got to try out the new Microsoft Band thanks to my work. . . here is what I thought Everyone that knows me knows that I don't care much for Fitness Bands and instead prefer to have the fitness clip ons. I love my Fit Bit and its going to be really hard to get me to completely switch over but there were a lot of features that I found on the Microsoft Band I haven't seen on others that I haven't seen on any other fitness devices before. 1) The ability to work on ALL platforms 2) You can get specifics about your workout that are separate from the overall day - it was interesting to see what I did at the gym specifically and will be interesting to see how it changes day to day 3) You can download workout programs to the band based on your goals and it will give you a new workout to try each day/gym session that follows your plan - Golds Gym, Shape Magazine, Microsoft Health were a few of the workout providers with i'm sure more to come 4) Starbucks app built in

Loaf of Cheese Bread

As me and Eddie are practicing portion control and trying to eat less calories I have been making a lot thinner pizzas - in turn I have a ton of pizza dough left over Rather than throwing it out or making another pizza I decided to make a loaf of bread for Sandwiches during the week cause Pizza dough is basically bread dough right? Either way it turned out so good I couldn't stop eating it!!! Loaf of Cheese Bread Ingredients: Pizza Dough Olive Oil Cheese Greek or Italian Seasoning Directions: 1) Pre Heat oven to 375 degrees 2) Form Pizza Dough into a Round Loaf place on Pizza Stone and top with a drizzle of Olive Oil 3) Top with Cheese and Seasoning 4) Bake for about 25 minutes or until dough it light brown Here's a Yummy Sandwich I make with the bread - Grilled Chicken, Pesto, and Motzarella

Chopped Caprese Salad

I've been trying to eat a lot more salads lately and Caprese Salads have been my go to when I'm getting tired of lettuce. I do mix it up a bit tho and have everything chopped up the same size Chopped Caprese Salad Ingredients: Tomatoes Mozzarella Olive Oil Greek or Italian Seasoning Salt Pepper Directions: 1) Chop Tomatoes and Cheese into the same size pieces 2) Add everything into a bowl and enjoy

Baked Wings

I finally figured out baked wings!!! Grilled wings will always be my favorite but these came out nice and crunchy and were a great alternative Baked Wings Ingredients: Chicken Wings Wing Sauce Directions: 1) Place Wings on top of a rack on a cookie sheet 2) Broil wings on low for 20 minutes per side 3) flip and do the first side for an extra 10 if needed NOTE: -They aren't quite baked but instead broiled and you NEED to have them on some kind of rack in order to get crispy this is the only away they can drain of the excess moisture and get a nice crunch without the rack they just get soggy no matter how long you cook them Both sides are on racks the right side is just a darker rack and doesn't stand out as much

Homemade Relish

The other day Eddie wanted Hot Dogs Typically I like my Hot Dogs with Mustard and Relish but I didn't have any relish . . . I did however have pickles so I decided to grind them up in the food processor and TA DA! relish Didn't need to add anything else to them just grind them up Who'd of Thunk it?

Easy Re-fried Beans

Today has been a lazy day for me and Eddie I made it to the gym this morning and a quick trip out for lunch but since we have both been sitting on the couch watching House of Cards I threw some Chicken in the Crock Pot this morning for taco and whipped up some super simple re-fried beans to go with Easy Re-fried Beans  Ingredients: 1/2 onion olive oil salt  pepper 2-4 cloves of garlic oregano  red pepper flakes can of beans (pinto or black) Directions: 1) Chop onion finely and saute over low heat in some olive oil, salt, and pepper for about 15 minutes or until they just start to caramelize 2) Chop Garlic and add in with a few shakes of oregano and red pepper flakes  3) Drain and Rinse Beans then add and heat through for about 5 minutes 4) Puree mixture in a food processor - if too thick add about 1 tbsp water 5) Season to taste
