Buffalo Chicken Taquitos

I didn't have to cook last night for 4th of July but I did bring Eddie something Special to work to share with his co- workers for lunch Fresh Fried Chips and Salsa + Buffalo Chicken Taquitos I have made taquitos quite a few time and always use some kind of hot sauce but I went back to a classic and my favorite Buffalo Sauce for Eddie and his co-workers yesterday Buffalo Chicken Taquitos Ingredients: -Shredded Chicken -Buffalo Sauce -Shredded Cheese -Corn Tortillas Directions: 1) Pre Heat Oven  to 425 degrees 2) Mix chicken, hot sauce, and cheese together in a bowl 3) Microwave 6 tortillas at a time for one minute 4) Fill tortillas with about 1-2 tbs of mix then roll up and place seam side down on a greased baking sheet 5) Spray tops of taquitos with cooking spray 6) Bake for 15-20 minutes

Fresh Chips and Salsa

I fried one chip and now I can't get enough. . . The chips in the bag have nothing on them lol To bring it up one more notch I made a few batches of salsa including one where I switched out the jalapeno with a serrano . . .which I thought were suppose to be spicier but was not at all . . .seriously think the salsa recipe is foolproof its all in the seasoning mix but the extra kick from the peppers definitely helps :) For the Chips: 1) Cut tortilla into 6-8 pieces 2) Fry in 350 degree oil for 1-2 minutes For the Salsa: Blend together 14oz can of tomatoes drained 1 whole jalapeno or serrano 1/8 of an onion 1 teaspoon garlic salt 1/4 teaspoon salt 3/4 teaspoon cumin 1/4 teaspoon sugar 1 teaspoon lime juice

Homemade Fried Tortilla Chips

I have made my own chips for a while typically baking them - - However when we were in Vegas on of the couples mentioned they have been frying their own lately and they are sooooooo good nothing else compares. . . SOOOOOOOO you know I had to try it for myself Homemade Fried Tortilla Chips Ingredients: Oil for Frying Corn Tortillas Seasoned Salt Directions: 1) Pre-Heat Oil to 350 degrees 2) Stack Tortillas up and Cut into 6 triangles 3) Fry about 20 chips for 2 minutes 4) Drain on Paper Towel and sprinkle with Salt 5) Repeat until all chips are fried

While Eddie think my original salsa recipe is perfect I am always trying to make it better Original Salsa Recipe Here Sabrina's Salsa Fresca Here Today I decided to switch out canned jalapenos I typically use for some fresh ones but kept the canned tomatoes for that cooked tomato taste Salsa Take 3 Ingredients: 14oz can of tomatoes drained 1 whole jalapeno 1/8 of an onion 1 teaspoon garlic salt 1/4 teaspoon salt 3/4 teaspoon cumin 1/4 teaspoon sugar 1 teaspoon lime juice Directions: 1) Chop off the top of the Jalapeno 2) Throw everything in a food processor 3) Blend until smooth

Enchiladas with Homemade Sauce

I LOVE Enchiladas and Enchiladas with Homemade Sauce is sooooooooo good - I made it once and never went back to the canned stuff. Making your own sauce is actually super simple and easier than you would think and the flavor makes it totally worth it I use Emeril Lagasse's recipe which can be found  here  with a few little twists including cayenne pepper to add a spicy kick Enchilada Sauce Ingredients: 3 tbsp vegetable oil 1 tbsp flour 1/4 cup chili powder 2 cups chicken stock or Broth (both work) 12 oz can of tomato paste 1 tsp dried oregano 1 tsp ground cumin 1/2 tsp salt 1/2 tsp cayenne pepper Directions: 1) In a saucepan combine oil and flour over medium heat for about 1 minute 2) Stir in chili powder  3) Mix in stock, tomato paste, oregano, and cumin  4) Bring to a boil 5) Reduce heat to low and cook for 15 minute NOTES: -Makes about 2 batches  -You can use plain tomato sauce or half sauce half paste for a thi...

With Vegas and Summer coming up I have decided to start eating a little bit healthier and rather than going low carb or no bread which works but doesn't last with me I figured I'd give the No Processed Food Diet another go around The first thing I decided to change is something that we eat all the time at our house SALSA. While I do make my own salsa rather than buy it BUT I use canned tomatoes and canned jalapenos in the recipe. It wasn't as easy as just swapping out the tomatoes and jalapenos for fresh -- I also had to adjust the seasoning a little bit . . . all and all I was pretty impressed with this salsa and will totally make it again!!! I Love BBQ Season!! SO much that it seems like all I've cooked lately is things on the BBQ Last night I grilled up some chicken that I had marinated in Cajun Seasoning, shredded it up, and threw it in a tortilla for some grilled chicken burritos Grilled Chicken Burritos Ingredients : -Chicken Tenders -Cajun Seasoning -Cheese -Tortillas -Burrito Fixings Directions: 1) Marinate Chicken in Seasoning over night 2) Grill Chicken 10 minutes on each side over medium heat 3) Shred Chicken 4) Add to a tortilla with cheese and other burrito fixings and roll up NOTE: -I hadn't been grocery shopping yet so all we had in our burritos was Chicken and Cheese but feel free to add in whatever burrito fixing you like -Don't have Cajun Seasoning? Mix it up with whatever you have -Don't have Chicken Tenders? Cut chicken breasts into 3-4 pieces and make your own or adjust grilling time

Chipotle Steak Burritos

The other day me and Eddie were really craving Burritos and wanted to make our Carne Asada Burritos Doesn't it look good? So we went to Trader Joe's to pick up the meat (Trader Joe's Carne Asada) and they were all sold out!!!! We had to compromise and got the thinly sliced Sirloin. Not quite sure what the spices are that Trader Joe's Uses I had to compromise with a mix of Chipotle and Taco Seasoning. . . the mix turned out to be a pretty good substitution - not as spicy as the original but definitely the same flavor profile I LOVE these little cubes! (1 cube = 1 Chipotle Pepper) Chipotle Steak Burritos Ingredients: 1-2 pound thinly sliced beef 2 cubes of Chipotle Seasoning Taco Seasoning 1 can Enchilada Sauce Directions: 1) Place Meat and Seasonings in CrockPot and cook on high for 4 hours or low for at least 6 hours 2) 30 minutes before serving - dump out juice, shred meat, then add in enchilada sauce 3) Serve in a burrito, ta...

Homemade Taquitos

The whole time we were in Chile we were CRAVING Mexican food. We had Breakfast Burritos in Texas. Tacos that night and then I decided to try my hand at homemade taquitos with the left over chicken I have read a ton of recipes online for them and they seemed super easy and seriously they were the easiest to make. They have a similar taste to the ones you buy frozen in the box but OMG soooooo much better!!! Frank's Crock Pot Chicken Burritos

Now that I am working 8 hours a day 5 days a week the Crock Pot has become my Best Friend . . . seriously easiest way to prepare dinner -Here's what we made last night Frank's Crock Pot Chicken Burritos Ingredients -Chicken Breast -Franks Hot Sauce -Taco Seasoning -Tortillas and your favorite burrito fixings Directions: 1) Throw Chicken Breast and Franks Hot Sauce in a Crock Pot and cook on low for at least 6 hours 2) When ready to serve drain juice and shred chicken 3) Stir in some taco seasoning and more hot sauce if needed 4) Serve in a tortilla with your favorite burrito fixings

Oven Quesadillas

It is not uncommon for us to have quesadillas for dinner but making them 2-3 at a time never seems to be enough - - Since my oven tacos were so popular I decided to try out quesadillas in the oven too and surprise surprise they taste just as good and are actually healthier and crunchier this way too :) Oven Quesadillas Ingredients: Corn tortillas Shredded cheese Shredded chicken Directions: 1) on a baking sheet spread out as many tortillas as you can (mine fit 6) 2) top tortillas with cheese - chicken - more cheese - second tortillas 3) put baking sheet in a cold oven 4) turn on to 350 degrees and cook for 10 minutes 5) broil for 1-2 minutes 5) flip and broil for 1-2 more minutes 

Carne Asada Burritos

As much as I have tried I can't seem to replicate Sinaloa's Colorado Burrito for Eddie. Browsing the aisles at Trader Joe's I got the idea to start with pre - marinated meat rather than just plain stew meat and while these still again weren't "Colorado Burritos" these are definitely some pretty awesome Carne Asada Burritos!!! Carne Asada Burrito Ingredients -1 package Trader Joe's Carne Asada Authentica -1 can Target Brand Enchilada Sauce -1 large spoonful of Blended Chipotle Chilies in Adobo Directions 1) Place Trader Joe's Carne Asada Authentica in Crock-pot on low for at least 5 hours 2) 1 hour before serving add the enchilada sauce and chipotle chilies 3) Shred and Serve

Oven Tacos

When it comes to tacos Eddie likes them crunchy and I like them soft. One night waiting for Eddie to get home from work I accidentally came up with a technique that makes them a little bit of both Oven Tacos Ingredients: -Corn Tortillas -Taco Meat -Cheese -Additional Taco toppings Directions: -Fill Corn Tortillas with meat and cheese and place into a baking dish -Place baking dish in a cold oven then turn on to 350 degrees -Cooks taco in oven for 10 minutes -After 10 minutes turn off oven and let tacos sit in oven until ready to serve -Take out of oven and top with any additional toppings that you like
