GF Mac and Cheese

Mac and Cheese is one of our favorite dinners and if you haven't read the recipe for our Original Mac and Cheese you should check it out here.

Being on our Gluten Free diet we haven't been able to find any boxed gluten free mac and cheeses that could quite satisfy the taste that we were looking for so . . . we have ditched the box and made it semi from scratch.

Gluten Free Mac and Cheese

-Frank's Buffalo Sauce
-4 Chicken Breasts
-4 Slices of Bacon (chopped)
-1 package of GF Pasta
-1 jar GF Cheese Sauce
-12oz Shredded Cheese
-GF Bread Crumbs

1) Marinate Chicken Breasts in Franks Hot Sauce (4 hours - overnight)
2) Preheat oven to 375 degrees and cook Chicken for 40 minutes
3) Turn oven down to 350 degrees
4) Cook the Bacon and let drain on a paper towel until ready to use
5) Boil Water and cook Pasta according to package directions
6) While pasta is cooking cut chicken into bite size pieces
7) Drain Pasta
8) Place Pasta back into pot then add cheese sauce…

Taco Sliders

The creativity with Corn Tortillas didn't stop here we got another recipe to share with you for Taco Sliders!! While the Cheeseburger Quesadillas we did last week were yummy they didn't give you the sensation of biting into a burger like these tacos do.

Taco Sliders

1 pound ground beef
Burger Seasonings
Corn Tortillas

1) Mix Ground Beef with Burger Seasoning then form into slider size patties
2) Cook bacon and Sliders
3) Warm 6 Torillas at a time in the microwave for 60 seconds
4) Fold Tortilla in half - place slider, bacon , cheese on one side - fold over
5) Use toothpick to keep taco together

Breakfast Cupcakes #2

Since going Bread Free/ Gluten Free Breakfast has become key to not starving throughout the day. However we can only eat eggs and bacon or sausage so much without getting tired of it.

To mix things up I did a variation of my Breakfast Cupcakes taking out the bacon and going with Turkey rather than ham as the main meat.

Turkey, Egg, and Cheese Cups

Sliced Turkey Lunch Meat
Eggs Scrambled

1) Pre-Heat oven to 375 degrees
2) Spray a muffin tin with cooking spray
3) Place 1 Piece of Turkey in each cupcake hole
4) Pour Scrambled Eggs into each cup filling about 3/4 full
5) Place cheese on top of the eggs
6) Bake for 15-20 minutes

NOTES -I use about 1 egg for every two cups -Usually we eat about 3 per person

Raspberry Lemonade

Since New Years I have been ready for the first day of summer and secretly hoping that the weather is going to get warmer and warmer and the snow will just stop out of no where. However that definitely has not happened and instead we are stuck in a snow globe and the snow will just not stop.

In the mean time this yummy Raspberry Lemonade has been keeping my summer hopes alive

Lemonade Vodka

Fill glass with ice then as much Lemonade Vodka that you want followed by soda

Super Bowl 2012

What is the Super Bowl without a bunch of junk food and a party of people to share it with? This year we did a potluck style Super Bowl party full of a bunch of yummy food . . .Here is what we contributed

Minty Peach Water (Place 8 frozen peach slices and 2 sprigs of mint into a pitcher of water and let sit for 4 hours)

Corn Tortillas

For the month of February me and Eddie have decided to go BREAD FREE!! It was a little crazy at first but the one thing that has totally saved us and helped us adjust has been corn tortillas.

We have probably eaten more corn tortillas than one person should eat but we have defiantly gotten creative in making our favorite dishes such as pizza and cheeseburgers into a bread free meal.

Below are some of the fun ways we have used corn tortillas:

Tortilla Pizzas
Corn Tortillas
Pizza Sauce
Shredded Mozzarella Cheese

1) Preheat oven to 350 degrees
2) Place Corn Tortillas on a baking sheet then top with sauce, cheese, and pepperoni
3) Cook at 350 degrees until cheese is melted (about 5 minutes)
4) Turn on broiler and brown the cheese (about 3 minutes)

Cheeseburger Quesadillas
Corn Tortillas
Shredded Cheddar Cheese
4 slices of Bacon
1/2 pound Ground Beef

1) Cook Ground Beef in a Skillet seasoning with the same spices as you would a hamburger…

Copy Cat - Wingers Rebel Sauce

Since getting a fryer as a wedding present - Fried Naked Wings have definitely made their place into our favorite dinner/party foods. Here in Utah we have a restaurant called Wingers that has one of the best sweet, sticky, spicy sauces that we have ever tried. Wingers does sell their original sauce at the various grocery stores in the area but being the spice lovers that we are we prefer it a little bit spicier (AKA Rebel sauce at the restaurant) which is not sold in stores. However thanks to Pinterest I have found a few copy cat recipes on Chef in Training and Six Sisters Stuff that feature the original recipe and have adjusted them into a spicier version.

Copy Cat Wingers Rebel Sauce
1/2 cup Frank's Red Hot Original Hot Sauce
1 cup Brown Sugar

1) On low heat brown sugar and hot sauce until combined
2) Heat on Medium for about 5 minutes to thicken the sauce

According to both recipes you need to use Frank's Hot Sauce to get the Wingers Flavor but…
