NYE 2015 Recipe 8: No Sauce Needed Meatballs

After a big Christmas Eve Party for New Years Eve we are keeping it light and easy with appetizers, small bites, and dessert

No Sauce Needed Meatballs!!! Again another Christmas Eve Recipe Making a Show at New Years Eve . . .these are sooo good I've made them 2 more times this past week


NYE 2015 Recipe 8:  No Sauce Needed Meatballs
Ingredients:
1 lbs ground beef
1/2 cup bread crumbs
1/4 cup Parmesan cheese
2 garlic cloves (grated)
1 tbsp onion powder
3/4 tbsp rosemary
1 tbsp parsley
1 tbsp basil
1/2 tsp salt
1/4 tsp pepper
1 egg

Directions:
1) Pre Heat Oven to 375 degrees
2) Mix Everything together
3) Roll into Meatballs
4) Bake for 20 -22 minutes

I made cheesy bread sticks on Christmas Eve with Gruyere Cheese that Eddie Loved! I still had puff pastry so i mixed it up for New Years with Asiago a Cheese he also loves


NYE 2015 Recipe 7:  Asiago Bread sticks
Ingredients: 1 sheet Puff Pastry 1 Egg 1 tbsp Water Cayenne Pepper Asiago Cheese (shredded) Thyme Rosemary
Directions 1) Pre Heat Oven to 375 2) Cut Puff Pastry into 9 strips 3) Brush strips with egg wash made with Egg, Water, and Cayenne Pepper 4) Top Strips with Cheese then Sprinkle with herbs 5) Bake for 10 minutes
6) Broil for 1-2 minutes

The Salami Chips I made Christmas Eve were a favorite among the boys -- they were so easy to make I figured why not whip them up again


NYE 2015 Recipe 6:  Salami Chips
Ingredients Salami
Directions 1) Pre Heat Oven to 375 2) Place a single layer of Salami on Baking Sheet   3) Bake for 10 minutes 4) Serve as is or with Cheese and Crackers

NYE 2015 Recipe 5: 
Chicken Poppers 
Ingredients
Chicken Tenders
Frank's Hot Sauce
Buttermilk
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Cayenne Pepper
1/2 tsp Paprika
1/2 tsp Garlic Powder
Whole Wheat Flour
Oil

Directions
1) Cut Up Chicken Tenders
2) Cover in a mixture of 1/2 buttermilk 1/2 Hot Sauce
3) Add Seasonings to mixture and Marinate for at least 20 minutes

4) Pre-Heat Fryer or Oil to 375 degrees
5) Drain Marinade and Coat Tenders in Whole Wheat Flour
6) Fry for 4 minutes

I always have at least a jar of my homemade salsa in the fridge so this appetizer was a no brainer -- we did spice it up a bit for tonight tho by adding a few hits of habanero hot sauce



NYE 2015 Recipe 4:  Chips and Homemade Salsa
Directions:
Blend together
14oz can of tomatoes drained
1 whole jalapeno or serrano
1/8 of an onion
1 teaspoon garlic salt
1/4 teaspoon salt
3/4 teaspoon cumin
1/4 teaspoon sugar
1 teaspoon lime juice

One of the Popular Appetizers I made for Christmas Eve was the Cannellini Dip. I kept the classic Rosemary and decided to mix it up with another flavor as well (Garlic Chiptole)


NYE 2015 Recipe 3:  Cannellini Dips

Rosemary Cannellini Dip Ingredients:
1 can of Cannellini or white beans (drained
Juice of 1/2 a lemon (1 1/2 tbsp)
2 tsp rosemary
1 clove of garlic
2 tbsp olive oil
1/2 tsp salt

Directions:
In a food processor mix everything together


Smoky Cannellini Dip Ingredients:

1 can of Cannellini or white beans (drained
2-3 cloves of garlic
1 can Chipotle Peppers in Adobo (drain the adobo)
2 tbsp olive oil
1/2 tsp salt

In a food processor mix everything together

NYE 2015 Recipe 2: Walnut Cups

After a big Christmas Eve Party for New Years Eve we are keeping it light and easy with appetizers, small bites, and dessert

For this recipe I used the left over that I had from the Walnut Horns I made for Christmas Eve . . .these were super yummy cookies but a total PITA to make -- these were still a little sticky and again I used too much filling but OMG so much easier and just as tasty

NYE 2015 Recipe 2:  Walnut Cups
Ingredients: 8 oz cream cheese 1 cup butter 2 1/4 cups flour 1/2 pound ground walnuts 1 cup sugar 1/2 cup milk 2 tbsp melted butter
Directions 1) Cream together cream cheese and butter 2) Add Flour 3) Divide into 4 equal portions - wrap and place in fridge for at least 2 hours 4) While waiting for dough to get cold mix together remaining ingredients to make filling 5) Pre Heat Oven to 375 degrees 6) Roll out 1 portion of dough and cut into 1 1/2 in squares
7) Place small squares into mini muffin tin and fill with a tsp of filling

8) Bake for 13 minutes

NYE 2015 Recipe 1: Energy Vodka Jello Shots

I recently learned that Eddie was basically a newb at Jello shots when I made them the other night so I thought these would be yummy when I saw a similar recipe for NYE recipes

Not going to lie these are INTENSE!!!

NYE 2015 Recipe 1:  Energy Vodka Jello Shots
Ingredients:
16 oz can of your favorite energy drink
3 packets unflavored jello
2 cups vodka
Sugar

Directions:
1) In a saucepan pour in energy drink and jello and let sit for 2 minutes
2) Cook on Low for 5 minutes then turn up to high untill mixture starts to boil
3) Take off heat and pour in vodka
4) Pour mixture into mini cups or ice cube mold or brownie pan (later cut into pieces) and place in fridge untill they firm up (about 4 hours)
5) About half way through sprinkle sugar on top of each shot

Italian Holiday Dinner - Recipe #1: Meatballs

I love throwing a themed holiday party on Christmas Eve each year for Eddie's Family. Growing up as a family we always celebrated Christmas Eve with my Aunt Rose so when we moved to Utah it didn't feel right not doing anything - Hense Christmas at the Aced every Christmas Eve

This years Theme is Italian Christmas Pizza Party

For Dinner we are doing 2 kinds of pizzas and a side of meatballs

Italian Holiday Dinner - Recipe #1 Meatballs
Ingredients:
1 lbs ground beef
1/2 cup bread crumbs

1 tbsp rosemary
