Oven Quesadillas

It is not uncommon for us to have quesadillas for dinner but making them 2-3 at a time never seems to be enough - - Since my oven tacos were so popular I decided to try out quesadillas in the oven too and surprise surprise they taste just as good and are actually healthier and crunchier this way too :) Oven Quesadillas Ingredients: Corn tortillas Shredded cheese Shredded chicken Directions: 1) on a baking sheet spread out as many tortillas as you can (mine fit 6) 2) top tortillas with cheese - chicken - more cheese - second tortillas 3) put baking sheet in a cold oven 4) turn on to 350 degrees and cook for 10 minutes 5) broil for 1-2 minutes 5) flip and broil for 1-2 more minutes 

Sausage Pizza

I try and make homemade pizza at least once a week. I thought we had pepperoni in the house but I didn't so we did all sausage and guess what??? Still AMAZING :) Eddie's Sausage Stuffed Crust Pizza Ingredients:  Pizza dough String Cheese (for stuffed crust) Sauce Mozzarella Cheese Sausage Seasoned salt Cayenne pepper Directions: 1) Make Pizza Crust (recipe here ) 2) Roll out dough (follow direction here  at the bottom of the page for stuffed crust) and place on pizza stone 3) Pre-Heat oven to 450 4) Cook sausage adding seasoned salt and cayenne pepper 5) Top dough with cheese, sausage, then more cheese 6) Bake for 20 minutes

Pig Smokies

Week 3 of Football means it time to bring out the football snacks This week for Monday night football we made up a batch of bacon wrapped little smokies and rooted for the Raiders!! Pig Smokies Ingredients: -Cheese filled Little Smokies -Thin bacon Directions: 1) Pre heat oven to 325 degrees 2) Cut bacon in thirds 3) Wrap each hot dog with bacon then stick with toothpick and place on baking sheet 4) Bake for 40 minutes 5) Broil for 3-4 minutes 6) Serve as an appetizer/snack

Salad Kits

On Pinterest Salads in Mason Jars keep coming up as a popular pin. Sounds like a good idea to have everything all right there and just having to shake but I still think that it will all get soggy sitting in the dressing all week While I was grocery shopping last week I found little mini dip containers with a lid (similar to what you would get at a fast food restaurant) and thought those would be a better idea So I purchased the little dip containers along with all my salad fixings - premade the salads in containers with the dip and threw them in the fridge Was super surprised that I actually did end up eating more salad last week and seriously only took like 5 minutes to put it all together Here's an example of my "Salad Kits"

Cheesy Bread (Again)

I swear you can't not mess up this Cheesy Bread Recipe . . . I have tried it with pre made dough and homemade dough and as long and you follow up a few guidelines it comes out perfect every time I made it last night with Trader Joe's Whole Wheat Dough and again PERFECT!!! Guidelines: 1) Preheat oven to 450 degrees 2) Melt 1/2 a stick of butter and put it in the bottom of a baking sheet 3) Top butter with pizza dough 4) Top Dough with a ton of cheese and herbs 5) Cook at 425 degrees for 15 minutes then lower the temp down to 350 for the last 10 Seriously you can't mess it up . . . Buckeye Candy

Watching FRIENDS I have become obsessed with figuring out what kind of candy Monica Makes in season 7 . . . I even bought the "Friends" cookbook in hopes that it will be in there but being a fictional candy there is no hopes So I took the next best option and started searching candy recipes on Pinterest. Being football season buckeyes have been popping up everywhere (peanut butter chocolate candy) - - after reading a few recipes and seeing how easy they actually were to make I decided to try them out for myself and i'm glad that I did Buckeye Candy Ingredients 1 1/4 cups Peanut Butter 1 cup Powdered Sugar 2 tbs Butter - melted Almond Bark (Chocolate works too) Directions 1) Mix Peanut Butter, Powdered Sugar, and Butter together 2) Roll mixture into small ball and place On a Baking Sheet 3) Put in Fridge for about 10 minutes 4) Melt Almond Bark 5) Dip Balls in the Almond Bark (found a fork to be the best method) 6) Place Back on Baking Sheet 7)

House Update (Summer 2013)

Haven't done a house update in awhile so for all of you that are wondering we have FINALLY started decorating lol Wedding Photos are now up along with a few items we picked up this summer :)

Chia Egg Replacement

Earlier in the year I decided to try the Chia Seed Diet and ever since have had the seeds hanging around the house On Pinterest, my girly magazines, facebook, basically everywhere I have been finding a ton of recipes that include chia seeds but the one that I kept running into was using chia seeds as an egg replacement 1 tsp of chia seeds + 3 tbsps of water = 1 egg (Let sit for 10 - 15 minutes to give it that gooey egg like texture) So the other night when Eddie wanted cookies and I had everything but eggs I decided to give this a try and surprising while you could tell they were made with chia seeds it worked and they were really good

Labor Day 2013

Its not Labor Day without a BBQ so that's exactly what me and Eddie had for dinner last night. We grilled up some burgers and threw some fries in the oven using my simple trick to make them tasted fried even when they are actually out of the oven :) Ingredients Frozen Bag of Fries Vegetable Oil Cooking Spray Seasoned Salt Directions 1) Preheat oven to 450 degrees 2) Coat Bottom of a Baking Sheet with Oil 3) Add Fries in a single layer 4) Spray with cooking spray then an even layer of seasoned salt 5) Cook for 20 minutes on the bottom rack @ 450 degrees 6) Move Fries to top rack and Broil on High for 2 minutes NOTE: *Quick BBQ Tip: Split a pound of seasoned burger meat into 4 patties and BBQ 6 minutes per side
