Spicy Chicken Enchiladas

While we have had to cut out Asian Food due to soy sauce having gluten (who would have known right?) thankfully Mexican Food has been there through it all Enchiladas our one of mine and eddies favorites and truthfully I never would have thought that they would be sooo easy to make the regular rolled up way instead of the casserole way like my mom make them (sorry mom for calling you out) but OMG it is so easy!!!!! Spicy Chicken Enchiladas   Ingredients: -Chicken Breast Shredded -Chipotle Chili in Adobo Blended -Mexican Cheese Shredded -Corn Tortillas -Enchilada Sauce   Directions: 1) Pre Heat Oven to 350 degrees 2) In a mixing bowl combine chicken breast with 1-2 spoonfuls of Chipotle Chili 3) Pour a good amount of enchilada sauce on bottom of pan 4) Wrap 6 Corn tortillas in a paper towel and microwave for 1 minute 5) One by one fill the tortilla with 2 tablespoons of the chicken mixture and a pinch of cheese in middle of tortillas and ro...

It has been about 6 weeks since me and Eddie started our bread free/ Gluten free diet. We are still going strong but have decided to add in a cheat meal once a week and expand our menu with new gluten free items. We have been shopping different grocery stores to see what they have to offer and have found lots of promising item but not very many that have been awesome or better than the originals. On that note lets start with the good things we have found and will probably continue to eat even after this diet. 1) Glutino Gluten Free Pretzels Picture from caloriecount.about.com   These pretzels are so good and super crunchy. GF Mac and Cheese

Mac and Cheese is one of our favorite dinners and if you haven't read the recipe for our Original Mac and Cheese you should check it out  here. Being on our Gluten Free diet we haven't been able to find any boxed gluten free mac and cheeses that could quite satisfy the taste that we were looking for so . . . we have ditched the box and made it semi from scratch. Gluten Free Mac and Cheese Ingredients -Frank's Buffalo Sauce -4 Chicken Breasts -4 Slices of Bacon (chopped) -1 package of GF Pasta -1 jar GF Cheese Sauce -12oz Shredded Cheese -GF Bread Crumbs Directions 1) Marinate Chicken Breasts in Franks Hot Sauce (4 hours - overnight) 2) Preheat oven to 375 degrees and cook Chicken for 40 minutes 3) Turn oven down to 350 degrees 4) Cook the Bacon and let drain on a paper towel until ready to use 5) Boil Water and cook Pasta according to package directions 6) While pasta is cooking cut chicken into bite size pieces 7) Drain Pasta 8) Place Pasta ba...

Taco Sliders

The creativity with Corn Tortillas didn't stop  here  we got another recipe to share with you for Taco Sliders!! While the Cheeseburger Quesadillas we did last week were yummy they didn't give you the sensation of biting into a burger like these tacos do. Taco Sliders Ingredients 1 pound ground beef Burger Seasonings Bacon Cheese Corn Tortillas Directions 1) Mix Ground Beef with Burger Seasoning then form into slider size patties 2) Cook bacon and Sliders 3) Warm 6 Torillas at a time in the microwave for 60 seconds 4) Fold Tortilla in half - place slider, bacon , cheese on one side - fold over 5) Use toothpick to keep taco together

Breakfast Cupcakes #2

Since going Bread Free/ Gluten Free Breakfast has become key to not starving throughout the day. However we can only eat eggs and bacon or sausage so much without getting tired of it. To mix things up I did a variation of my  Breakfast Cupcakes  taking out the bacon and going with Turkey rather than ham as the main meat. Turkey, Egg, and Cheese Cups Ingredients Sliced Turkey Lunch Meat Eggs Scrambled Cheese Directions 1) Pre-Heat oven to 375 degrees 2) Spray a muffin tin with cooking spray 3) Place 1 Piece of Turkey in each cupcake hole 4) Pour Scrambled Eggs into each cup filling about 3/4 full 5) Place cheese on top of the eggs 6) Bake for 15-20 minutes NOTES -I use about 1 egg for every two cups -Usually we eat about 3 per person

Corn Tortillas

For the month of February me and Eddie have decided to go BREAD FREE!! It was a little crazy at first but the one thing that has totally saved us and helped us adjust has been corn tortillas. We have probably eaten more corn tortillas than one person should eat but we have defiantly gotten creative in making our favorite dishes such as pizza and cheeseburgers into a bread free meal. Below are some of the fun ways we have used corn tortillas: Tortilla Pizzas Ingredients: Corn Tortillas Pizza Sauce Shredded Mozzarella Cheese Pepperoni Directions: 1) Preheat oven to 350 degrees 2) Place Corn Tortillas on a baking sheet then top with sauce, cheese, and pepperoni 3) Cook at 350 degrees until cheese is melted (about 5 minutes) 4) Turn on broiler and brown the cheese (about 3 minutes) Cheeseburger Quesadillas Ingredients: Corn Tortillas Shredded Cheddar Cheese 4 slices of Bacon 1/2 pound Ground Beef ...
