Eddie's 30th Birthday

For Eddie's 30th Birthday we kept it pretty low key. Eddie took the day off to spend time with his family up at Snowbird (yearly family week long reunion) while I was stuck back at work We met up later that night for dinner and catching up on our DVR before Eddie spends the next 12 days recording every single Simpsons Episode ever made on FXX

Roasted Corn

While Eddie is trying to eat Low Sodium I am trying to eat more Veggies I've been taking Salads for Lunch and trying to pair dinner with some kind of Vegetable The other day I found frozen corn in the freezer So I. . . 1) Pre Heated the Oven to 425 Degrees 2) Threw the corn on a baking sheet 3) Tossed it with with olive oil, salt, and pepper 4) Baked for about 20 minutes Turned out Pretty Awesome and think I will try a few other frozen vegetables this way

Stuffed Shells

Me and Eddie Usually go out to eat a least once a week but lately we have drastically reduced that and are instead eating at home a lot more In order to keep things fun and interesting I've been trying out new recipes that I don't usually make like these Stuffed Shells Lasagna Style Stuffed Shells Ingredients: Giant Pasta Shells Garlic Oil (or Olive Oil and Minced Garlic) Italian Seasoning Ground Turkey Tomato Sauce Ricotta Cheese Parmesan Cheese Directions: 1) Pre Heat oven to 350 degree 2) Boil Water For Pasta and Cook According to package directions 3) While waiting for water to boil cook ground turkey in a little bit of garlic oil then season with Italian Seasoning 4) Put half of the sauce in the bottom of a baking pan 5) Mix Together Ground Turkey and Ricotta 6) Stuff Each Shell with the Mixture 7) Place in baking pan and top with remaining sauce and Parmesean Cheese 8) Bake for about 45 minutes

Copy Cat Popeye's Spicy Chicken Tenders

Eddie has been eating low sodium lately and in turn we have not been to Fast Food Since I have been CRAVING Popeye's Spicy Chicken Tenders but thinking about how much salt they probably use has stop me and Eddie from going - so i came up with my own version that made it lower in sodium Copy Cat Popeye's Spicy Chicken Tenders Ingredients Chicken Tenders Franks How Sauce Whole Wheat Flour Bread Crumbs Oil Directions: 1) Marinate Chicken Overnight in Franks Hot Sauce 2) Coat Tenders in a Mixture of Flour and Bread Crumbs 3) Fry at 360 degrees for 4 minutes

3 Ingredient Mac and Cheese

So Apparently cooking your pasta for Mac and Cheese in Milk is the best way to do it so I tried it out last night I was definitely super creamy and easy . . .  needed a little salt and extra seasonings but defiantly going to make it this way again 3 Ingredient Mac and Cheese Ingredients 2 cups Milk 2 cups Pasta 2 cups Cheese Salt and Other Seasoning Directions 1) Add Milk and Pasta to Pot and cook on medium for 10 minutes then low for another 10 2) Once Pasta is cooked add Cheese to the mixture and stir until smooth 3) Season to your liking and Enjoy NOTE -I baked mine for 30 minutes at 350 degrees and topped with extra cheese and breadcrumbs before eatting

Overnight Oats

I had my first try at overnight oats last night and it can't be any easier  1 part Oatmeal (any kind)  1 part Milk (any kind) Mix it up and throw it in the Fridge Overnight then in the morning add whatever you want -Sweetener -Nut Butter -Fruit -Chocolate Chips . . .  The list goes on This morning I added fresh Pluots

Lasagna Roll Ups

Eddie LOVES Lasagna but for whatever reason I don't make it all that often. So when I decided to surprise him with it the other night for dinner I made it extra special and made Lasagna Roll Ups. Same Components and flavors but just all rolled up rather than layered. Lasagna Roll Ups Ingredients: Lasagna Noodles Garlic Oil (or Olive Oil and Minced Garlic) Italian Seasoning Ground Turkey Tomato Sauce Ricotta Cheese Parmesan Cheese Mozzarella Cheese Directions: 1) Pre Heat oven to 350 degree 2) Boil Water For Noodles and Cook According to package directions 3) While waiting for water to boil cook ground turkey in a little bit of garlic oil then season with Italian Seasoning 4) Put half of the sauce in the bottom of a baking sheet 5) Lay out noodles flat - spread with ricotta then a even layer of turkey and Parmesan 6) Roll up then place in baking sheet 7) Cover with remaining sauce and mozzarella 8) Bake for about 45 minutes
