BBQ Wings

Anyone that has been to our house knows that Fried Naked Wings are one of our staples for Game Day and another other get together that finger food is a must. However since we are currently not eating fried food we decided to try taking the wings outside and cooking them on the bbq. Eddie was a total Rock Star with these and they actually ended up tasting better then fried!! Eddie's BBQ Wings Ingredients: Chicken Wings Spice Seasoning or Marinade Wing Sauce Directions 1) Marinate Wings in Seasoning for at least 2 hours 2) Get Grill Heated between 375 and 425 Degrees 3) Place Metal Grilling Sheets on Grill and Spray with Cooking Spray then add the Wings 4) Cook for about 15 minutes per side until wings are brown and crispy 5) Add Wing Sauce and Enjoy NOTES -Found the metal racks at Wal-Mart -The Seasoning we use is a Spicy Chipotle Hickory Meat Rub but feel free to use whatever you want (ex: Salt and Pepper - Buffalo Sauce Marinade - Garlic and Italian Seaso

Copy Cat Avalanche Bars

In my quest to actually make some of these recipes I have been pinning on Pinterest I came across a recipe for "Avalanche Bars". Apparently theses are sold at Rocky Mountain Chocolate Factory and are sooo addicting that a Copy Cat Recipe was created . . . After making them last Sunday for family dinner I now know why . . .they are like rice krispy treats but totally knocked up. If you love the taste of Peanut Butter - White Chocolate with the crunch of rice krispies this is totally something to try. Copy Cat Avalanche Bars   Ingredients 1 bag of White Chocolate Chips 1/4 cup Peanut Butter 3 Cups Rice Krispies 1 1/2 Cups Mini Marshmallows 1/2 cup Chocolate Chips     Directions 1) In 30 Second Increments melt White Chocolate Chips in Microwave until smooth) 2) Add Peanut butter and microwave for 15 more seconds 3) Stir in Rice Kripsies 4) Let sit for 5-10 minutes 5) Stir in Marshmallows and Chocolate Chips 6) Place into a greased pan

Green Chili Beef Tacos

I'll admit it I am addicted to Pinterest and post tenzillion recipes and craft ideas but hardly ever do any of them. So before going grocery shopping last week I decided to go through my pins and pick out one recipe to make this week. Typically we make our tacos and burritos with chicken but going through my pins I found an awesome steak recipe that would be good for tacos from Shannon Shaffer on Lifetime Moms . I tweaked it a little bit based on convenience and what we like and in the end it turned out great. Green Chili Beef Tacos Ingredients: 2 pounds of Beef Roast 1/2 teaspoon black pepper 1/2 teaspoon brown sugar 1 teaspoon of chili powder 1/2 teaspoon of cumin 1 small can of green chilies 2 tablespoons Chipotle Chili in Adobo Paste* 2 tablespoons minced garlic 1/2 cup of water Directions: 1) Place Roast in Slow Cooker 2) Season Meat with black pepper, brown sugar, chili powder, and cumin 3) Blend the can of green chilies spoon in a food processor then s

Brown Rice Chips

Last Month me and Eddie tried Trader Joe's Brown Rice Tortillas. We were looking for something Gluten Free to replace corn tortillas with and thought they would be great but ended up being not the best - weird texture, kind of crunch but not, made the burrito taste like a big un-fried egg roll and seems more fit for a Asian style sandwich wrap than anything else but wasn't quite sure what to do with them . . . until now!!! I was making Tortilla Chips the other day following this recipe when I ran short of tortillas so figured why not? and grabbed the brown rice tortillas. Used the same concept tweaking the recipe just a little bit. Spicy Brown Rice Chips Ingredients: -Brown Rice Tortillas -Olive Oil -Garlic Salt -Cayenne Pepper Directions: 1) Pre Heat oven to 350 Degrees 2) Brush 5-6 tortillas with olive oil then sprinkle on seasoning 3) Stack tortillas on top of each other and cut into 8 pieces 4) Place on Baking Sheet and cook for 10 minutes on lowest rac

Gluten Free Pizza

While being Gluten Free me and Eddie have been on the Quest trying to find the BEST GF Pizza on the market - whether is was using some kind of crust mix or pre made we tried a lot of different options. . . We tried the Namaste Foods Gluten Free Pizza Crust Mix last month with not the best results. The pack came with 2 servings and no matter how much I cooked it or thin I spread the mix it just didn't taste right as you are see here. Since then we have tried two more options: Udi's Gluten Free Pizza Crusts These we found in the freezer section of the grocery store you can either keep them frozen or in the fridge (we keep them frozen and they defrosted in like 15 minutes) It comes with in the bag and they are the size of a personal pizza and you top them with whatever you want then throw them into the oven. While these were defiantly better than the Namaste Foods Pizza Crust they still did have a little bit of a gummy texture to them. If we were to try them again I woul
