Corn Tortillas

For the month of February me and Eddie have decided to go BREAD FREE!! It was a little crazy at first but the one thing that has totally saved us and helped us adjust has been corn tortillas.

We have probably eaten more corn tortillas than one person should eat but we have defiantly gotten creative in making our favorite dishes such as pizza and cheeseburgers into a bread free meal.

Below are some of the fun ways we have used corn tortillas:

Tortilla Pizzas

Ingredients:
Corn Tortillas
Pizza Sauce
Shredded Mozzarella Cheese
Pepperoni

Directions:
1) Preheat oven to 350 degrees
2) Place Corn Tortillas on a baking sheet then top with sauce, cheese, and pepperoni
3) Cook at 350 degrees until cheese is melted (about 5 minutes)
4) Turn on broiler and brown the cheese (about 3 minutes)


Cheeseburger Quesadillas

Ingredients:
Corn Tortillas
Shredded Cheddar Cheese
4 slices of Bacon
1/2 pound Ground Beef

Directions
1) Cook Ground Beef in a Skillet seasoning with the same spices as you would a hamburger then set aside
2) Cook the Bacon then crumble into the ground beef
3) Cook Quesadillas adding ground beef to the cheese


Homemade Tortilla Chips

Ingredients:
Corn Tortillas
Olive Oil
Taco Seasoning
Garlic Salt

Directions:
1) Pre Heat oven to 350 Degrees
2) Brush 5-6 tortillas with olive oil then sprinkle on taco seasoning and garlic salt
3) Stack torillas on top of each other and cut into 6 pieces
4) Place on Baking Sheet and cook for 10 minutes on lowest rack
