Italian Holiday Cookie #2: Amaretti Morbidi (Soft Almond Cookies)
I love throwing a themed holiday party on Christmas Eve each year for Eddie's Family. Growing up as a family we always celebrated Christmas Eve with my Aunt Rose so when we moved to Utah it didn't feel right not doing anything - Hense Christmas at the Aced every Christmas Eve
This years Theme is Italian Christmas Pizza Party and for dessert I am making a ton of Italian Cookies
Ingredients:
1 1/2 cups ground almonds
1 1/2 cups sugar
2 tbsp flour
2 egg whites
1/2 tsp almond extract
powdered sugar
Directions
1) Combine Ground almonds, sugar, and flour
NOTE: I took whole almonds and ground them up in the food processor - almond flour would work too
2) In a separate bowl mix egg whites until soft mounds (just before soft peaks)
3) Combine almond mixture and egg whites
NOTE: it will be like soft sand
4) Rub powdered sugar on hands and form small 1 inch balls with mixture
NOTE: you may need to reapply the powdered sugar every now and then
5) Pre Heat oven to 300 degrees
NOTE: you wait to pre heat so the mixture has time to set
6) Bake for 20 minutes
7) Let cool then Enjoy!
UNFORTUNATELY this cookies did not come out like expected :( BOO!!!

1/2 cup brown sugar
1/2 cup sugar
1 eggs
1/2 tsp vanilla
1 1/2 cups flour
1/2 tsp baking soda
1 Cup Cookie Crumbs
Directions:
1) Pre Heat Oven to 350 degrees
2) Cream Butter and Sugars
3) Add in Egg and Vanilla
4) Add Flour and Baking Soda
5) Mix in Cookie Crumbs
6) Bake for 10-15 minutes depending on the size of your cookies

UNFORTUNATELY this cookies did not come out like expected :( BOO!!!
Not only did the cookies totally spread but they didn't come together at all and was a big crummy mess. . . However those crumbs were DELICIOUS!! and I totally could not throw them away
so i mixed up a batch of my basic cookie dough and threw some in and they were DELICIOUS!!!!
